Ovum works with organic vineyards across the state and takes a low-intervention approach in the cellar with nothing added or taken away (except a tiny amount of SO2 to keep things stable). This blend is 50% Riesling 30% Gewurztraminer 14% Early Muscat 3% Sauvignon Blanc and 3% other varieties. Some of the fruit is left on the skins for various lengths of time to add a bit of texture and complexity. The result is a fresh juicy and salty on the finish. Try this with sautéed shrimp dishes avocado toast or big salads.
