Aitia is a new project from Laura Brennan Bissell that focuses on the Washington side of the Columbia Gorge. Her farm here sits at one of the highest spots of the region at 1,700ft elevation. The farming here is incredibly conscientious; all organic, own-rooted vines, dry-farmed, no till, cover crops, and a variety of animals for biodiversity! In the cellar, she lets all of that incredible work in the vineyard shine by using native yeasts, neutral barrels for gentle oxidation, and very little sulfur. This example of Pinot Gris is so nicely balanced. Soft, delicate creaminess cradles bright, fresh acidity, plump stone fruits mix with savory, salty minerality.
