Arianna began studying wine/winemaking when she was in 16- inspired her by uncle and his famous COS wines. It has always been important to her to make wines that truly reflect her home so from the beginning she has never used chemicals in her vineyards and she uses almost no additives in the cellar either. The ‘SP68’ is named after the street that leads to the original vineyard in Vittoria reflecting the journey of the wine the use of ancient techniques and varieties to make something now modern and new. This blend is 60% Zibibbo and 40% Albanello fermented with the skins for up to 5 months then 6 months in concrete tanks and one month in bottle before release. Concentrated aromatic textural and briney; a fascinating wine. Try this with strong cheeses roasted chicken or linguini with clam sauce! –
