Everything is done by hand and the farming is all organic. This bottling ages on the lees in stainless steel and fiberglass tanks before bottling unfined and unfiltered with the absolute minimum of sulfites. It is described as having “aromas of fennel fronds chamomile tea almonds and tangerine that lead into a full but delicately rendered palate.
