The Jasci vineyards overlook the Adriatic Sea on the Eastern coast of Italy at around 850ft elevation. The Jasci family has made wine here for 3 generations maintaining their old-school winemaking traditions while updating the farming to be certified organic. Pecorino is of course a famous Italian cheese, but also a lovely white grape; fresh, softer acidity, textural, lightly floral/aromatic and plenty of sea-salt. Pair with anything that needs a frsh queeze of lemon and a sprinkle of salt like fried dishes, pasta with lemon and capers, or grilled veggies!
