The Jasci vineyards overlook the Adriatic Sea on the Eastern coast of Italy at around 850ft elevation. The Jasci family has made wine here for 3 generations maintaining their old-school winemaking traditions while updating the farming to be certified organic. Pecorino is of course a famous Italian cheese, but also a lovely white grape. This version of their Pecorino is made entirely without sulfites and the result is fascinating to see how much more vibrant and mineral driven the wine is compared to the sulfur-added cuvée!
