You may be familiar with the coastal- salty Assyrtiko from Santorini but grown further inland in Macedonia this grape can take on a more floral note with added body and texture. The Thymiopoulos estate in Naoussa and Fytia is biodynamically farmed and sits on granite and schist soils. The Assyrtiko is fermented and aged in stainless steel and is fresh floral and delightfully easy-drinking.
