Von Winning believes that the if you work with a great vineyard and you farm it organically- the best thing you can do in the cellar is as little as possible; their winemaker’s motto is “not doing the wrong thing at the wrong time.” For this special bottle they are working with a very special site deemed an ‘Erste Lage’ equivalent to Grand Cru status in 1828. The vines sit on a former coral reef of limestone giving its signature textural minerality. The wine ages in very large neutral barrels on the lees for 18 months before release. This wine is stunning but you will definitely be rewarded if you can wait to drink it for many years.
