Étoile is a unique, tiny appellation within the Jura named after the tiny star-shaped fossils that can be found scattered throughout the vineyards. Victor Gros planted the vines for the Domaine de Montborgeau in 1920 and now his granddaughter Nicole Deriaux leads the charge. She continues to make extremely traditional wines here from Chardonnay and Savagnin. The ‘Etoile’ cuvée is 100% Chardonnay aged for 24-30 months in very old barrels, never racked and never topped up so it is oxidative in style. Think of this like ‘Vin Jaune Light’; salty, nutty, like a fresh, dry sherry, with this gorgeously silky texture. Demands to be drank with Comté.
