Organic estate in the Cotes Catalanes planted on schiste noir at almost 1-000ft elevation all south facing so these vines stay nice and cool at night and get tons of ripening sunlight during the day. This cuvée is 70% Macabeu 30% Grenache Gris fermented and aged in most stainless steel with a small portion resting in oak barrels to round out the vibrant acidity. Notes of ripe pear walnut meyer lemon and a stony minerality. This would be a fantastic pairing for many richer cheeses.
