Iconic Vouvray producer! The ‘Le Mont’ is a single biodynamic vineyard plowed by with horse, with stony soils mixed with green clay. In order to create a cuvée with perfect ripeness, they must harvested in multiple passes as the entire bunch will not always ripen at the same rate. This bottling is ‘demi-sec’, meaning off-dry which perfectly balances the incredible acidity of the Chenin Blanc from ‘Clos du Bourg’. Incredible as a pairing for spicy green curry, equally good with a piece of really good unctuous cheese.
