The Gavoty family- currently helmed by matriarch Rosely Gavoty has been tending this estate since 1806 and they’ve been doing so without chemical inputs for decades. Today the domaine is transformed into a polyculture farm complete with sheep goats and surrounded by forest. This wine is fermented and aged in cement and steel tanks bottled with a small addition of sulfur. A balance of fresh and ripe pear meyer lemon with a crisp salty finish. –
