This bottling comes from a property just outside of the Yonne which is the furthest north and coolest in Burgundy so the fruit is very fresh and bright. For the ‘Ovoide’ the wine ages in a cement egg like the one you see on the label. He creates two other expressions of this wine; one aged in barrels, one in tank, each completely unique. This wine is singlular, expressive, and has a beautiful clay like texture and a clean mineral/earth-driven palate.
