From Saint Bris (shares the same climate and same base of Kimmeridgian limestone as its neighbor Chablis). – Jean-Hughes Goisot was among the vanguard of Burgundian biodynamic viticulture- and his son Guillaume upholds the family’s meticulous standards. This Aligoté is hand harvested from 6.3 ha of vines located on high cool-climate slopes of dense chalky soil and is fermented with indigenous yeasts in temperature controlled stainless steel vats. It is aged on fine lees also in stainless steel. Elegant refreshing and absolutely loaded with mineral-driven texture this cuvée offers delicate layers of lemon blossom yellow apple quince lemon curd and spice accompanied by fantastic precision and cut.
