Mas Theo (abbreviated from Mas Theolas) is a family farm that dates back to the 1800’s! Today- three farms are combined each brought in as the family expanded working not only with vines but also sheep breeding open meadows grain fields and a distillery. This kind of biodiversity is paramount to a truly sustainable operation both for the environment but also for the people who care for it in an ever changing climate this diversity hedges your bets. In 1999 Laurent Theolas took the helm and converted everything to organic farming and then eventually biodynamics. He also took over an old quarry which turned into a perfectly temperature-controlled winery! ‘Ginger’ is 35% Marsanne 35% Roussane 30% Grenache blanc left on the skins for ~15 days giving the wine color and texture. Juicy aromatic and super expressive. This is a great wine to try with aged cheeses mushroom dishes or mole.
