When you envision Tuscany, the rolling hills, the sunflowers, the cypress trees, you are conjuring the Torre alle Tolfe estate; complete with 50 hectares of vines, olive groves, forests, and a beautiful hotel and restaurant. Evidence of winemaking at this location goes all the way back to the 1300’s and has been taken care of by the Castelli family since the 1950’s. Their rosato, which drinks more like a very light red is 80% Sangiovese and 20% Canaiolo aged in a combination of stainless steel and tonneau. A dark, savory rosé with notes of dried cherries and herbs. Excellent as a pairing for juicy summer tomatoes and burrata, or anything tomato sauce based!
