Graci is situated on the Northern Slope of Mount Etna so it is slightly cooler here than many of the Etna wineries. The vineyards here are very high, from 2,000-3,200ft elevation and many of the vines are on their own roots due to the sandy volcanic soils. Alberto Aiello Graci works exclusively with the native grapes of Mount Etna and in both the vineyard and the cellar he aims to use as little inputs as possible to showcase this unique terrior. The ‘Rosato’ is 100% Nerello Mascalese fermented in concrete vats and rested for 3 months. Super light, delicate, just barely ripe strawberries and sea salt; a very pretty rosé! This is a great wine to pair with salmon or tuna sushi, brunch dishes, or just as an aperitif on the patio.
