Led by Roselyne Gavoty, this domaine encompasses a beautiful polyculture farm of 110 hectares that has been farmed without chemicals for decades and is now in conversion to Biodynamic farming. This land which sits along the Issole River in a town called ‘Cabasse’ or ‘Harvest Fields’ has been in the family since 1806. The blend for the ‘Grand Classique’ is a 50/50 mix of Grenache and old-vine Cinsault and blended from both pressed juice and macerated so it manages to attain a beautiful balance of body and acidity. Very pretty on the nose; a touch of lavendar, fresh strawberries. This is the ultimate Provence rosé; perfect with a wide range of dishes from fresh salads to salmon on the grill.
