Les Brebis is a small family-run winery whose last name is Shaffer meaning Shepherd in German- hence the sheep. They work with a selection of sustainably farmed vineyards in Eola Amity-Hills AVA and the adjacent South Salem Hills. In the cellar they allow the wine to ferment with its own yeasts then age the wines in small French oak barrels and bottle unfined and unfiltered.
