Fossil & Fawn is made by an impossibly nice couple in the Willamette Valley whose tagline is “Odd & Yummy-” which I believe perfectly encapsulates their wines. The ‘Pinot Gris’ is a blend of two organic and no-till vineyards the No Clos Radio (Tualatin Hills AVA) and Silvershot Vineyards (Eola-Amity Hills AVA). This cuvée defies expectations for ‘Pinot Grigio’ by utilizing the slightly rosy tint to their grape skins and macerating the wine as long as they would for a red giving this wine its gorgeous color and just a bit of tannin. Like drinking the most perfect rooibos iced tea with a squeeze of lemon!
