After mostly selling his fruit to the larger wineries in Bierzo, Diego Losada finally decided to make his own wine! He works with just 5 hectares of old bush vines that he farms without chemicals at very low yields. In the cellar he uses concrete vats and old barrels and almost no intervention; letting the fruit speak for itself. For the ‘Vindemiatrix’ he co-ferments in cement a mix of red and white grapes that grow together as they have historically done in this area and then bottles unfined, unfiltered, and with minimal sulfur. Very light, chillable, a touch of smoke, fresh clay, and cranberry!
