Ailala named for an exclamation in the local dialect for a ‘happy party’ is a collaboration between two wineries in the Avia Valley in Ribeiro Spain. Inma Pazos of Los Vinos de Miguel and the Carreiro family of Coto de Gomariz came together in 2011 to start this project of fun- approachable wines using varities that are indigenous to this North-Western corner of Spain. This blend of mostly Souson with a small percentage of Brancellao Ferrol and Caiño Longo comes from a selection of terraced parcels farmed with biodynamic practices. The wine ferments in stainless steel then ages for 4 months in old barrels. A juicy vibrant red-fruited wine perfect for the famous Iberian ham of this region or lighter grilled proteins and vegetables. –
