Though this beautifully farmed fruit from the Padovani sisters could qualify as Brunello, because of the limits on yields/production for the appellation, the rest of the fruit goes towards this high-quality Rosso di Montalcino. The parcels for this bottling are on the North-facing slopes keeping the fresh in our ever-warming climate and then everything is harvested by hand and fermented naturally in open-top fermenters. The wine ages in an assortment of Slavonian oak botti for 2-3 years before bottling unfined and unfiltered. Decant if drinking now, but you will be rewarded for holding onto this bottle for several years.
