Based in Nuits-St-Georges this silky Bourgogne comes from a tiny lieu-dit ‘Les Chaillots’ with vines from 40-70 years old grown on a mixture of limestone and clay. This small- family-run operation is a true labor of love doing everything by hand. They farm without chemical sprays and they avoid using a tractor to avoid compacting the soils. The fruit is completely destemmed and then fermented in old barrels before aging in 25% new French oak for one year. Drink now or be rewarded with ~5 years of age!
