Bertha is named after a character from a story that the winemaker, Josep Torres’ father used to read to him. Today Bertha tells the story of Cava, an often misunderstood wine. Until very recently, the regulations for Cava were very broad, and anyone in Spain could make a sparkling wine and label it Cava. Today, in favor of higher quality and more terrior (a reflection of the place and people) those rules have become a lot of more strict. The farming must be sustainable, the appellation has become smaller, and the aging requirements have increased. Bertha has been following these new guidelines since its inception in 1989. They use the native grape varieties (Xarel-lo, Parrellada, and Macabeo), ferment with the Champagne-method, and then age for 18 months at a minimum before release. This is our best value for high-quality, Champagne-esque sparkling wine.
