This is the heart of where Cava began- but this small appellation requires higher quality standards organic farming and minimum aging. It is made the same way Champagne is made giving it tiny bubbles and a gentle creaminess. AT Roca is a 3 generation family run domaine and was one of the first to join this DO. The Rosat Reserva is composed of equal parts Macabeu and Grenache grown on calcareous soil. The wine ages for a minimum of 20 months and bottled with zero dosage so it is crisp and dry on the finish. –
