The name Anima Mundi refers to Plato’s theory of “the soul of the world,” a pretty lofty ideal to live up to, but winemaker Agustí Torello Roca believes that wine can be an elegant expression of ‘nature’s soul’. That’s why he insists on working with certified organic vineyards for the gentlest impact on the environment and uses no additives at all in the cellar to insure the purest translation of those vineyards. At a bargain, this method ancestral (pet-nat) sparkler is fresh, creamy, and full of life.
