One of the few white DOCG’s of Italy is the great Fiano di Avellino, but it’s a wine we rarely see on menus, or requested in shops. Winemakers like Tenuta Sarno 1860 (which as you might guess, was founded in 1860) have been championing this incredible variety for hundreds of years now, and in fact this is the only grape that they work with at Sarno. The soil here is an unusual type of Limestone called ‘Pietra Candida’ which gives their Fiano a unique, mineral quality. The ‘Emme’ sees some skin-contact before fermenting, but because they do not allow it to oxidize, the wine is still a light, straw color and incredibly clean on the palate. Vibrant, flavorful, fresh herbs, lemon zest, and lime leaf.
