Weightless- creamy delicate. My platonic ideal of Champagne. This comes from a measly 2.5 hectare plot called ‘Le Mont Benoit’ in the village of Villers-aux-Noeuds. All three major Champagne grapes are grown in the chalky-clay soils blended as 1/3 Chardonnay 1/3 Pinot Noir 1/3 Meunier. All farmed and vinified by hand by Emmanuel certified organic very low sulfur and no filtering native yeast fermentations extra-brut.
