Though Antonin Bonnet and Pierre Caizergues both come from winemaking families in the Languedoc region, they actually met while working in NYC and shared an inspiring bottle of wine together. Ultimately they decided to pursue the dream their parents always wanted for them and moved back home to create Domaine de Stricou focused on sustainability and not concerned with fitting into any wine appellations (their wines are all Vin de France). This fun pet-nat has a NYC cityscape across the label as an homage to where they met and is 100% Chardonnay from just outside Carcassonne made with nothing added. Crisp and clean, like biting into a fresh, crunchy, green apple. Lovely bubbles, not too frothy or explosive; a great aperitif!
