The Ponson family has been at the forefront of Biodynamic farming in Champagne since 2011 when Maxine convinced his parents to convert from conventional farming. Today they aim to use as little in the vineyard as possible even of organic materials, allowing nature to take its course. The same goes in the cellar where the only addition is a tiny amount of sulfur when necessary. All of the family plots are within Premier Crus of Champagne with this cuvée blending from several plots. 70% Pinot Meunier, 15% Pinot Noir, 15% Chardonnay. Super floral on the nose, creamy cherry, white flowers, very pretty.
