Small, family-run estate based in the Aube farming organically since 2009 and now biodynamic. Instead of the classic blends, Piollot prefers to bottle their wines as single vineyard cuvées with a single variety. The ‘Champ Reyes’ is 100% Chardonnay. The base wine is vinified in a combination of steel and old barrels, then left on the lees for the 2nd fermentation for 4-6 years before bottling with zero dosage!
