‘Paul Gadiot’ is a new label by Camille Ponson of the Ponson Champagne family. His older brother has been at the helm of Ponson since their father Maxime tragically passed in 2018. They are well known for their commitment to organic and now biodynamic practices in the vineyard and very low-intervention in the cellar using native yeasts and avoiding fining/filtration. The blend for this vintage cuvée is 50% Chardonnay, 25% Meunier, and 25%Pinot Noir and the wine spends nearly a decade on the lees before release giving it a beautiful richness and brioche character.
