Delphine Boulard is now at the helm of this beautiful- and tiny domaine in the Vallée de la Marne. Her family converted everything to organic farming with biodynamic treatments back in 1996 when they realized how harmful all of the chemicals used in this area are. After experimenting with one plot and seeing the improvement in the wine they converted everything else. The ‘Les Rachais’ comes from that original plot a single lieu-dit only 0.5 hectares entirely Chardonnay with vines planted in 1964 on uniquely sandy soils. The vin clair is fermented and aged in old Burgundian barrels then spends several years on the lies for the second fermentation. Dosage is only added in less ripe vintages and only a tiny addition of sulfur at bottling.
