Fabrice Gass is the winemaker for Bollinger Champagne and this is his side-project utilizing just one hectare of vines in the tiny village of Damery- which is coincidentally neighbors with Cumieres where Georges Laval his longtime friend makes some of our favorite Champagne. Just like Laval these wines are made naturally with organically farmed grapes native yeast fermentations and very little intervention in the cellar. The wines are aged in 100 year old barrels do not go through malo (because the high acidity naturally prevents this) and Fabrice himself riddles the wines by hand! Crisp lean dare I say profound!
