Bianca Miraglia has been making locally-sourced vermouth without a drop of sugar, no additives and/or preservatives long before it was the “cool” thing to do. All ingredients are either foraged from untouched areas, or purchased from a small farm (preferably non-profit). For the ‘Bianca’ dry vermouth the wine base is from the biodynamically-farmed Macari Vineyards on Long Island, fortified with Catawba brandy from Finger Lakes Distilling, aromatized with all NY herbs and botanicals.
