Though this is technically unfortified (the fermentation is stopped using their 5 year old estate wine and then the blended wine is rested and allowed to evaporate until the alcohol level reached 17%), and it comes from outside of Jerez, it has all the hallmarks of a great Sherry. This family run estate has been established since the 1700’s and it one of the last in Villaviciosa de Córdoba, a few hours north of the ‘Sherry Triangle’. Their vineyards were actually the very first to be certified as organic in Spain, back in 1988! The ‘Abocado’ is a sweet style of sherry made from late harvested grapes perfect with nutty desserts and strong cheeses.
