Koval is a small craft distillery in Chicago using 100% organic ingredients and run by husband-and-wife team Dr. Robert Birnecker and Dr. Sonat Birnecker-Hart. They work for small, conscientious farmers for their grains and then the rest of the process is done on site from milling to distilling and bottling. 100% Midwestern Rye distilled on site, proofed down with Lake Michigan water, then aged in American Oak barrels crafted in Minnesota.
