An entirely biodynamically farmed Irish whiskey! This is basically unheard of in the region- largely because of the climate it is very hard to farm organically let alone with a biodynamic system. The result is one of the most balanced most flavorful whiskies (Irish or otherwise) that I have had the pleasure of tasting all year! There is a beautiful textural component with a bit of saltiness toast cherry puree red apples and vanilla. The finish seems to never end definitely a bottle to savor!
