One of the oldest Shochu distilleries in Japan and one that takes great pride in the farming of their ingredients which they do all organically. The ‘Memory’ is 80% Kogane Sengan Sweet Potatoes and 20% Black Koji Rice- distilled and then aged for 3 years in clay amphorae. Serve warm or chilled to bring out different flavors.
