Nizawa Brewery is a perfect introduction to sake because their whole mission is to create the “ultimate food-friendly sake”! In 2018 the brewery made a big shift by promoting 22-year old Nanami Watanabe to ‘Toji’ brewmaster; an unprecedented move in another industry that is almost entirely led by men. She has flourished in the role and won them many awards for her sakes. The ‘Atago No Matsu’ is a Tokobetsu Honjozo- which means it is made with a small amount of distilled spirit. Typically this style is made with lower quality or less polished rice but at Nizawa it is made with Grade A Yamada Nishiki rice milled to 60%. This is a beautiful pairing with oysters a fish crudu or scallops. Clean elegant and very dry on the finish.
