Cachaca- like rhum agricole and Clairin is a rum made from fermented fresh sugar cane juice which gives it a funkier more tropical herbal nose. Novo Fogo is championing a massive reforestation effort for the Atlantic Forest where they are located so that they leave the land better than they found it. They also farm their sugar cane with out any chemical sprays. Their cachaca is made as naturally as possible in copper-pot stills then rested in tanks for one year before release to integrate the flavors and give it some softness around the edges. This is the classic base for a caipirina!
