Though the Rhum J.M. distillery has a centuries old history- the current owners are commited to bringing their production into the future by converting the facility to entirely no waste including a no-exhaust boiler conversion to 100% reuse of bagasse and massive lily ponds to neutralize all water waste. As a rhum agricole they use only fresh sugar cane juice rather than molasses as the basis of their rum and then for the VSOP age the spirit for 3 years in new American oak followed by one year in a combination of ex-Bourbon and French oak before being blended and bottled.
