Fulano is a 5th generation family run distillery using estate-grown agave from sites in the Highlands, but at a variety of elevations and aspects to enhance their final blend. They use a rotation of crops to maintain soil health and rarely use petro-chemicals on their plants. They are committed to using only fully ripe Blue Weber agave, but believe that every plant is unique and some are physiologically ready after a few years, and some after 8-10. Their fermentations are started with a pied-de-cuve of sorts, taking the strongest yeasts from their agave plants and building them up in open top fermentors. The ‘Fuerte’ Blanco is bottled at still strength for the most flavor/character highlighting the mineral quality of their volcanic water source.
