Yola was founded by Yola Jimenez who wanted to find a way to utilize her degree in Women’s Studies, and also connect with her heritage. Her grandfather loved mezcal and purchased a farm and distillery when he was young, but in 2007 after he passed, Yola had an opportunity to carry on his legacy. She decided to hire an all women team to help her run the estate. Yola mezcal is made entirely from this small farm, double distilled, left to rest in glass containers before bottling and labeling by hand. The ‘Pechuga’ is a very special bottling where the second distillation includes tons of chopped citrus, guayabas, pineapple, and a turkey breast rather than the classic chicken. Bright, juicy, creamy, and just a touch savory on the finish. This was created to celebrate life’s milestones!
