Champagne-method cider made from organically farmed apples in limestone soils in the lesser known Aube region of Champagne. A blend of heirloom apple varieties is gently pressed and ferments naturally without any sulfur additions. It then undergoes its second fermentation in bottle- and ages 2+ years before disgorgement.Try this with creamy cheeses or pork dishes. Truly the Champagne of Cider and equally age-worthy!
