Brooklyn Cider House literally began in the middle of Bushwick, Brooklyn, but from the beginning they were determined to grow their own apples so that they could have control over the farming and quality of the fruit they used. To that end they set up shop in upstate NY where their Twin Star Orchard is is growing and will soon supply all of the apples used in their production. The ‘Raw’ is a Basque-style cider made with Northern Spy, McIntosh, and Dabinett apples. Bone-dry, tart, a little funky; great with food!
